Healthy Beetroot Soup Recipe
Before starting this healthy eating plan I had never tried a beetroot soup recipe before. This has now become one of my favorite diet soup recipes.
The addition of the cauliflower seems to complement, perhaps even tone down the earthy flavor of the beetroot. For additional flavor you could add a stick of celery along with the onion add the beginning of the recipe.
Preparation Time
Boil beetroots – approx 45 minutes
Soup preparation – 15 minutes
Ingredients
3 medium-large beetroots
1 small-medium onion
Approx 125g cauliflower
Salt and freshly ground black pepper
Sour cream or crème fraiche
Directions
Scrub the beetroot and boil in just enough water until tender – approx 45 minutes. Add whole onion to the cooking water about 15 minutes before the beetroot is ready.
Clean cauliflower and break into florets.
Remove beetroot from saucepan. Add cauliflower to the cooking water and lightly simmer for around 5-8 minutes, until just tender. Do not overcook.
While cauliflower and onion are still simmering peel the beetroot and roughly chop. Once cauliflower is tender, turn off heat and allow vegetables to cool slightly.
Blend beetroot, onion and cauliflower until smooth, using cooking water to achieve desired consistency.
Return to pan and season well with salt and freshly ground black pepper
Pour into mug or bowl and serve with a teaspoonful of sour cream or crème fraiche.
